First there was the traditional halloumi and then a farmers cheese was the second set of curds that came from the boiled milk. Afterwards we ate it fresh with traditional Cypriot delicacies kibbeh, olive bread, spinach boreks, cucumber and tomato. I always thought you fried halloumi but learned you eat it fresh.
